Tell us briefly who you are and how long you've been working for Antonio & Marco

I've been Head of Business Development for Antonio & Marco restaurants for 4 years. I'm in charge of opening both company-owned and franchised restaurants, which means I handle openings from A to Z: finance, construction, equipment, admin, interior design… managing the project and all the stakeholders. In particular, I support franchisees in their entrepreneurial project all the way to opening day.
I'm also in charge of purchasing for the group: supplier negotiations, managing our supplier price list, and so on.

Why did you choose Yokitup, and how did you manage purchasing, inventory and margin control before?

When I joined the company, we only had two restaurants. It was easy for the chefs to place orders by phone or text, to calculate margins in an Excel spreadsheet and to track stock with a paper list.
But since we wanted to grow into a bigger network and put a proper framework in place, especially for franchising, we absolutely had to find a central tool to place orders, run inventory counts, build recipe cards, record waste, track margins…

What are the main benefits of using Yokitup? (margin points gained, time saved per week / month...)

  • Prices entered in the tool and easy to update = recipe cards costed quickly, and they update automatically when prices change
  • Tool connected to our POS system = margins, sales and waste are easy to calculate
  • Inventory counts / spot counts are easy to run
  • Control over the stores' orders
  • Credit note requests sent automatically from the app
  • Every employee in the company can use it easily from the mobile app: time saved, margin points gained, everything centralized for the group

How do the teams use Yokitup day to day? (features, mobile app, etc.)

Restaurant teams use Yokitup every day to place orders, receive deliveries, run inventory counts… The mobile app is very well designed and easy for everyone to use, even for people just starting out in the restaurant business.
At head office, we also use it every day through the back office, which is very comprehensive and offers a whole range of possibilities (order control, sending invoices, recipe card costing, analyzing the numbers…).

Which Yokitup features do you use the most?

On my side, in purchasing, it's mainly the back office, where we add new products and update prices, and the recipe cards tab.

What's new for you right now, and what are your next ambitions?

Soon, at the end of September, we're opening a new concept called A Bianca Romana, on rue Victor Hugo in Lyon. It's a concept built around filled schiacciata, and it's to die for!
By the end of 2025, we'll be opening 3 franchised restaurants in Limas, Lozanne and Montpellier!
The end of 2025 and 2026 promise great things and some exciting partnerships. We're always trying to innovate and come up with crazy projects!
As for the rest, I'll keep a few surprises up my sleeve 😊
